This speedy side is an easy way to impress this summer. Serve up sweet cherry tomatoes on crusty bread, with plenty of aromatic garlic.

roasted cherry tomato bread

serves 6  preparation time 5 minutes  cooking time 30 minutes

500g cherry tomatoes on the vine
6 garlic cloves, skin left on
1 tbsp olive oil, plus extra, to drizzle
Sea salt
1 baguette

1. Preheat oven to 200°C. Line a baking tray with baking paper.

2. Put the cherry tomatoes and garlic cloves on the tray and spoon over olive oil and season with a good pinch of sea salt. Roast for
20 minutes or until tomatoes are starting to collapse and garlic is soft.

3. Cut the baguette into 12 slices on the diagonal. Drizzle the bread with olive oil and grill both sides until golden. Rub the roasted garlic into the toasted bread and add the lightly crushed cherry tomatoes. Season with more salt and pepper and serve.
