BBQ seafood is always a summer favourite. Serve up scampi with this special green sauce – your guests will love the taste!
barbecued scampi with green sauce
Serves 6 preparation time 30 minutes cooking time 10 minutes
6 large scampi
2 tbsp butter, melted
1 bunch fresh coriander
2 garlic cloves
2–4 jalepeño slices (more if you like it spicy)
Juice of 1 lime
2 tsp Dijon mustard
1 tsp honey
¼ cup olive oil
Sea salt, to taste
1. To make the green sauce, place all the ingredients (except olive oil and sea salt) into a food processor and blitz until combined. Transfer to a bowl and whisk in the olive oil. Season with sea salt and set aside.
2. Preheat barbecue over high heat. To prepare the scampi, use kitchen scissors to cut away the soft, transparent shell on the underside to expose the flesh. Brush the fleshy side of the scampi with the butter and sear on both sides for 4–5 minutes each or until cooked through, basting with additional butter during cooking and turning only once.
3. Plate up the scampi and serve drizzled with the green sauce.
